Easy Tomato Basil Soup
We spent so much of the summer canning and jamming and now it is time to do something with all those goodies! One of the easiest things to do with all those tomatoes is to make some soup. It is quick and always a hit. The recipe is originally from my mom and I tweaked it. I have never been a fan of tomato soup until I tried it from scratch, changes everything!
1 tbs olive oil
2 tbs diced onion
1 tsp italian seasoning
4 -6 leaves fresh basil
1 sprig fresh oregano (optional) or 1/4 tsp dried.
I clove of garlic, minced
1 pint jar tomatoes
1/4 c whole milk or cream
1/4 c mozzarella
Cook onion in oil until soft, 3-4 minutes.
Next add seasoning, herbs, and tomatoes. Roll the basil leaves to chop so that you don't handle them too much.
Cook over medium heat until some of the liquid cooks down. Add milk and cheese and cook until cheese is melted.
Put in blender to puree and serve hot with fresh basil, cheese, or my hubby's favorite, a grilled cheese sandwich!
