Healthy Apple Muffins
After a couple busy weeks with work and family visits I had a weekend home with my little man. This weekend he requested muffins, specifically brown muffins. Although I am pretty sure he confused brown with chocolate, I none the less went on the search for brown muffins. I found this great recipe at http://cookieandkate.com/2011/apple-oatmeal-muffins/ and tweaked it just a bit. Ingredients:
1 cup whole wheat flour
1/4 cup almond flour
1 1/2 cups old-fashioned oats
1 tsp baking powder
1/2 tsp baking soda
dash of salt
1 tsp cinnamon
1/2 tsp pumpkin spice
dash of nutmeg, cloves, ginger, cardamon
1 cup of my yummy applesauce
1/2 cup coconut or almond milk with juice of half a lemon (or buttermilk)
heaping 1/3 cup brown sugar
2 tbs melted coconut oil
1 large egg, lightly beaten
1/2 tsp vanilla
2-3 sweet apples, chopped
First preheat oven to 375 degrees
Line a muffin tin with wrappers or spray or oil.
In a large bowl combine flour, oats, baking powder, baking soda, salt, and all spices. In a separate bowl combine applesauce, buttermilk, sugar, oil, egg and vanilla extract. Make a well in the dry ingredients and pour in your applesauce mixture. Stir until just moist.
Fold in the chopped apples and optional nuts. Fill muffin cups ⅔ to ¾ full. Bake for 16-18 minutes and enjoy!!
